Vahdam Teas is a family industry that makes garden-fresh Indian teas for over 80 years. I wanted to try something different with my cookie recipes, so I added tea to my basic cookie recipe and the results were delicious!
The first two teas that I used were the Vanilla Spiced Tea (Chai Tea) and the Turmeric Spiced Tea (Herbal Tea).
For both I used one bag of tea for a half batch of cookie dough. I omitted the cookie flavor extract and instead I added the previously grounded tea herbs to the dough. The smell is amazing and the taste is so delightful. The Vanilla Spiced cookie had the vanilla flavor with an infusion of the chai spices. The Turmeric Spiced cookie had an explosion of spice flavors. Both cookies had a balanced burst of flavors.
Afterward I used two different Matcha Powders: Mint Matcha and Vanilla Matcha.
For both cookie recipes I used one tablespoon of matcha powder for a half batch of cookie dough. And just like the first batch of tea cookies, I omitted the use of any extracts. The dough will turn a little green because of the powder. And again the final product was unbelievable. The Vanilla Matcha cookie tasted wonderful and the Mint Matcha cookie was like a sugar cookie but with a hint of the freshness because of the mint. What a great combination of flavors!
I had never considered adding tea as a flavor to my cookies. Trying this approach was a great experience.
